“Clean Out the Fridge” Pasta Sauce

Thursday was not a great day.  Nothing terrible, just a bunch of little things that went wrong.  By dinner time I realized I had no plans for the meal, but no desire to go to the grocery store.  I was pretty happy when I noticed in my pantry some whole wheat spaghetti noodles and a jar of spaghetti sauce.  Those two would have been a fine dinner, but I also had a bunch of “this-n-that” veggie that I needed to use up.  I grabbed everything and started chopping.  I ended up with:

  • Half an onion
  • Garlic clove
  • Small zucchini
  • Half a yellow bell pepper
  • Third of a bag of broccoli slaw
  • Handful of kale that was on it’s last leg
  • Half a bag of frozen artichoke hearts
  • Small can of sliced black olives

I threw all of that into a saute pan and made sure everything was cooked, but not too soft.  Then I added the jar of spaghetti sauce and kept it simmering while the noodles cooked.  This sauce was so hearty it probably didn’t even need the pasta noodles, but I had them so I cooked them up.  Dinner served.

 

Later today I will be picking up our race packets for the 10 mile “Run for the Water” run on Sunday.  Funny note:  Last weekend we mentioned to our son that were were running the “10 mile Run for the Water” only he thought we said “10 mile Run Through the Water.”  Now that would be tough!  I’m going to remember that when I’m running the hill part of this course.  I’ll tell myself, “at least I’m not running through water.”
